Yeah, middlenames are awesome. But why do some fic writers give canon characters middlenames that they canonically don't have?

When a name is mentioned in something official like a court appearance or a police file then it's save to assume that this is the full name. Yes or yes?
This means Nick's full name is Nicholas Stokes. No middlename! And Sam and Dean have no middlenames either! Okay, I'm ignoring the fact here that Sam and Dean's profiles said they're both the same height and I think there were eye color errors too.
